Apple’s Siri virtual assistant can be useful, funny, and sometimes annoying.

Why should you remove your audio data from Siri and Apple’s servers

If you’ve disabled this option, you can rest assured that Apple won’t be able to view or save audio recordings of your future interactions from your device.

Note. For users with multiple iOS devices, disabling Enhance Siri and Dictation on any device will not disable it on all of your devices. You have to turn it off separately on each of the iOS devices you use.
